Summary: I was discussing cakes with MrAsk and he can’t see why you would have any other cake when you can have chocolate. We fought bitterly about the best flavours and combinations. This cake was the delicious result of our combined efforts.
Ingredients
- 1 cup flavourless vegetable oil
- 2 eggs
- 250g castor sugar
- 1 cup Greek style plain yoghurt
- 280g SR flour
- 1/3 cup cocoa
- 1 orange, zested
- 1 tblsp orange liqueur
- Filling
- 125g butter, softened
- 200g icing sugar
- 2 tblsp good quality drinking chocolate (or cocoa)
- 1/4 cup orange marmalade
- Topping
- 150g dark chocolate, chopped
- 1 tsp vegetable oil

Instructions
- Preheat oven to 180C.
- Add the oil, eggs and sugar to the bowl of a mixer (or a bowl with beaters) and beat until thick and well mixed.
- Add the yoghurt, zest, orange liqueur and beat again briefly to mix well. Fold in the flour & cocoa
- Pour the batter into a greased ring tin and bake for 30 – 40 minutes or until a skewer comes out clean.
- Leave to cool in the tin for 10 mis before turning on to a plate until completely cooled.
- Filling
- Beat the butter, icing sugar and drinking chocolate together in a mixer or with beaters for 5 mins.
- Cut the cooled cake in half horizontally using a bread knife.
- Spread the icing on one half of the cake and the marmalade on the other. Gently put the two halves back together.
- Topping
- Put the chocolate in a microwave safe jug and heat for 20secs at at time, stirring in between, until melted. Add the oil and stir well.
- Pour/drizzle the chocolate over the top. Allow topping to set before serving
