Recipe: Lemon Cream Mousse

Summary: Perfect after a big meal or when you need a lush dessert in a hurry. Even the cooking challenged can manage this one (yes, you can) with only 4 ingredients!

Ingredients

  • 300ml cream
  • 200ml sweetened condensed milk
  • 2 lemons, juiced and zested
  • Yellow gel food colour, if desired

Instructions

  1. Add the cream, zest and milk and beat in a mixer (or with electric beaters) until soft peaks.
  2. Add lemon juice and food colour (if using) and whip till thick.
  3. Place mousse in serving glasses and chill till serving.
  4. Serves 2 people generously but can be easily doubled or tripled.
