Recipe: Lemon Dill Potatoes

Summary: I love potatoes! They add that carby goodness to a meal. Sometimes you want something crispy and rich, sometimes you want something that feels a bit lighter. This is both! Mr Ask was in love with these potatoes, we almost fought over the last few, despite being full. These are very much worth trying!
Ingredients
  • 1 kg potatoes, cut into medium cubes
  • 2 tblsp garlic olive oil
  • 1 lemon, juiced and zested
  • 4 sprigs fresh dill, torn
  • Sea salt flakes
Instructions
  1. Pre heat oven to 200C.
  2. Add the potatoes to cold water and bring to the boil. Cook until just tender. Drain well.
  3. Add the oil and potatoes to a baking tray, toss well to combine. Sprinkle with salt, to taste.
  4. Bake for for 40 minutes or until they are staring to brown and crisp.
  5. Sprinkle with zest and juice, the return to the oven for 10 minutes.
  6. Remove from the oven, sprinkle with dill and eat in a greedy fashion!
