Summary: I love potatoes! They add that carby goodness to a meal. Sometimes you want something crispy and rich, sometimes you want something that feels a bit lighter. This is both! Mr Ask was in love with these potatoes, we almost fought over the last few, despite being full. These are very much worth trying!
Ingredients
- 1 kg potatoes, cut into medium cubes
- 2 tblsp garlic olive oil
- 1 lemon, juiced and zested
- 4 sprigs fresh dill, torn
- Sea salt flakes
Instructions
- Pre heat oven to 200C.
- Add the potatoes to cold water and bring to the boil. Cook until just tender. Drain well.
- Add the oil and potatoes to a baking tray, toss well to combine. Sprinkle with salt, to taste.
- Bake for for 40 minutes or until they are staring to brown and crisp.
- Sprinkle with zest and juice, the return to the oven for 10 minutes.
- Remove from the oven, sprinkle with dill and eat in a greedy fashion!
