Summary: I love my greens! From green juices and smoothies to a big ole bowl of veggies. This is all that green with a delicious side of carbs. I love that this sauce takes minutes to make and it’s on the plate. I tend to have this when Mr Ask is having meat bolognaise because it’s a nice small serve. Of course, you could double or triple if you are serving more people. I like this to be really lemony and a thinner consistency but it’s really easy to adjust to taste. I also like to add a little shake of red pepper flakes on top as well for added kick.
Ingredients
- 60g baby spinach
- 4 spring onions, roughly chopped
- 2 tblsp lemon juice
- 1 tblsp pepitas
- 2 tsp olive oil
- 2 tsp nutritional yeast
- 1 clove garlic
- Salt & pepper, to taste
- Red pepper flakes, to taste
Instructions
- In a bullet blender or small food processor, add all ingredients.
- Process on high until the pesto reaches the desired consistency.
- Makes enough to coat 250g (dry weight) of pasta. Or serve on top of pizza or with smashed avocado toast.
