Summary: This is less of a recipe and more of an assembly job, really nice and simple. In fact this is something the kids could make for you(I hope the Dads are listening, this is a perfect Mothers Day treat). The details are up to you – Make your own curd or buy it. Make your own pastry cases from scratch, from frozen shortcrust or just buy them made. It’s up to you and how much time and energy you have. Whether you buy or make the mini tart shells, don’t fill them till a few hours before serving or the pastry will soften. As you can see from the pic, they didn’t even last long enough for a proper photo!
Ingredients
- Sweet mini tart shells
- Lemon curd
- Fresh berries (or frozen, defrosted) to decorate
- Icing sugar for dusting
Instructions
- Fill each tart shell with lemon curd and top with berries.
- Dust tarts with icing sugar just before serving.
