Recipe: Make Ahead Raspberry Oat Breakfast Bars {Easy One Bowl Recipe That freezes Well!}

Summary: I love how easy this is to make! And how few dishes it makes, just one bowl, measuring cup and a spoon. No scales needed, unless you want to be super precise. Just dump, stir and bake! They make for a great breakfast on the go and are pretty healthy when you consider the standard bowl of sugary cereal. I cut mine into 9 squares and think 2-3 bars per person with a piece of fruit makes a great breakfast. So if you are into meal prepping they make enough for a week for one person. I’ve added Greek yogurt to the mix for extra protein. You can use plain yogurt in low or full fat or use a flavoured one but the flavoured ones will add a little extra sugar. I have used a plain and also coconut flavoured versions. I’m currently raspberry obsessed but you can mix and match berries as you please, fresh or frozen is fine too. I really enjoy these! They are pretty much like a bowl of porridge/oatmeal in bar form and keep a pretty moist, almost pudding like texture. Not very sweet, chewy and filled with fruity chunks, these are very much my sort of breakfast food!

Ingredients

  • 170g Greek yogurt
  • 200ml milk
  • 1 egg
  • 200g (approx. 2 1/4 cups) oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch salt
  • 100g (1 cup) raspberries plus 50g for topping

Instructions 

  1. Pre heat oven to 190C and grease and line a 9” or 23cm square cake pan.
  2. Add everything thing to a large bowl (exception the reserved raspberries for the topping) and stir until well combined. Make sure everything is thoroughly combined.
  3. Spoon into the prepared tin and top with reserved fruit.
  4. Bake for 40 mins or until set and golden brown. Allow to cool in the tin for 15 mins before cutting into bars and serving.
  5. Can be stored for 4-5 days in the fridge and any extras bars can be frozen in a freezer bag or air tight container. Reheat in microwave in 30-second to 1-minute increments until warmed through.
