Summary: Mr Ask is a maple fiend, so I made this one for him and his sweet/salty obsession. I however will be having a bacon free version…..
Ingredients
- Cupcakes
- 300g plain flour
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 125g butter, softened
- 140g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup light sour cream
- 1/3 cup maple syrup
- Buttercream Icing
- 125g butter, softened
- 250g icing sugar
- 1/4 cup maple syrup
- 10 rashers bacon
Instructions
- Pre heat oven to 190C (180 fan forced). Line a muffin tin with patty pans.
- Cream the butter and sugar in a mixer or with electric beaters, till nice and fluffy.
- Add the egg, vanilla, maple syrup and sour cream and mix until well combined.
- Mix in flour, salt and baking powder in two batches.
- Divide mixture between the 12 patty pans and bake for 15-20 mins or until a skewer comes out clean.
- Allow to cool on a rack.
- For the icing:
- Beat the butter and icing sugar together and slowly add in the maple syrup. Allow to beat for up to 10 mins until pale and fluffy.
- Pipe or smooth onto cupcakes.
- Fry bacon in a pan till very crisp, drain on paper towel and break into shards. Decorate cakes with bacon.
- Makes 18 cupcakes
