Recipe: Mashed Potato Casserole

Summary: I am in love with mashed potato but this really turns up the volume! I make double the mash and use the leftovers for this (you could freeze it for another day too).

Ingredients

  • 1kg potatoes, peeled, cooked & mashed
  • 125g butter
  • 2 onions, chopped
  • 2-3 cloves of garlic, minced
  • 125g bacon, diced (optional)
  • 1 bunch parsley, chopped
  • 125ml sour cream (low fat OK)
  • 2 cups grated cheese (I use 1/2 cheddar and 1/2 Parmesan)
  • 1/4 cup bread crumbs
  • Salt & pepper to taste

Instructions

  1. Pre heat oven to 180C.
  2. Mash butter, salt and pepper into the cooked potatoes.
  3. Fry the onions, garlic and bacon until golden brown and add to mash.
  4. Add the parsley, sour cream and 2/3 of the cheese to mash and stir till well combined.
  5. Spoon the mash mix into a greased baking dish and sprinkle with bread crumbs and remaining cheese. Bake for 30 mins or until hot through and browned and bubbly on top.
