Summary: I am in love with mashed potato but this really turns up the volume! I make double the mash and use the leftovers for this (you could freeze it for another day too).
Ingredients
- 1kg potatoes, peeled, cooked & mashed
- 125g butter
- 2 onions, chopped
- 2-3 cloves of garlic, minced
- 125g bacon, diced (optional)
- 1 bunch parsley, chopped
- 125ml sour cream (low fat OK)
- 2 cups grated cheese (I use 1/2 cheddar and 1/2 Parmesan)
- 1/4 cup bread crumbs
- Salt & pepper to taste
Instructions
- Pre heat oven to 180C.
- Mash butter, salt and pepper into the cooked potatoes.
- Fry the onions, garlic and bacon until golden brown and add to mash.
- Add the parsley, sour cream and 2/3 of the cheese to mash and stir till well combined.
- Spoon the mash mix into a greased baking dish and sprinkle with bread crumbs and remaining cheese. Bake for 30 mins or until hot through and browned and bubbly on top.
