Summary: Mr Ask is the King of Breakfast! His perfect waffles are, well, perfect but the other day he came up with these. Oh how I love the savoury goodness of these delicious Mashed Potato Waffles. Side dish, snack, breakfast, brunch. With sour cream, bacon or just on their own – delicious! We never have left over mashed potatoes because mashed potato is awesome but we always have frozen mash. If you are using frozen, use a saucepan instead of a frypan and add the mash to the onions until it’s defrosted. The flour ratio is just right for frozen mash, which is quite stiff but you may need a little more if you are using homemade. This recipe makes four waffles but can be doubled, tripled or more!
Ingredients
- 2 tblsp garlic oil
- 1 onion, chopped
- 375g mashed potatoes
- 1/4 cup plain flour (or more if you need it)
- 2 eggs
- 1/4 salt
- 1/4 tsp pepper
Instructions
- Add the oil and onion to a fry pan and cook until onion is soft, about 5 to 7 minutes.
- Preheat waffle maker.
- Combine onion mix and everything else in a bowl until it becomes a stiffish uniform mix. Add a little extra flour if you need it, you are going for thickish cake batter.
- Lightly spray waffle maker with cooking spray. Scoop 1/4 of the potato mix to the center of waffle iron and close lid. Cook until golden brown.
- Serve with sour cream, that is if you can stop yourself from eating then straight off the waffle maker!
