Recipe: Mini Citrus Cheesecakes

Summary: I so love this easy recipe and keep eating the results

Ingredients

  • 250gm (1 pkt) softened cream cheese
  • 395gm (1 tin) sweetened condensed milk
  • 1 lemon, juice and zest
  • 1 lime, juice and zest
  • 1 pkt Orange Cream Biscuits

Instructions

  1. Line a muffin pan with paper patty pans.
  2. Place half an orange cream, cream side up (not every one will retain bits of cream) in each patty pan. Makes 16-18 depending on how much you eat on the way!
  3. Beat the cream cheese till very smooth.
  4. Add condensed milk and beat until will combined.
  5. Add the juice and zest of the lemon and lime. Beat until well combined.
  6. Spoon into patty pans and put in the fridge to set for at least 3hrs. If you want to serve them early you can freeze them until the right consistency.

Quick Notes

Of course you could use this filling recipe to make a full size cheescake with the base of your choice.
