Summary: We almost never eat sandwiches but when we do, Mr Ask loves to make chicken salad. It’s a great use for leftover roast or rotisserie chicken. This never lasts long in our house!
Ingredients
- 1/2 chicken, roasted & shredded
- 1/2 small onion, finely diced
- 1 dill pickle, finely diced
- 1 tsp baby capers
- 2 tsp mustard, Dijon or Australian
- 1/4 cup good quality mayonnaise
Instructions
- Use a fork to mix together everything but the chicken. Add the chicken and gently toss to coat.
- Store in an airtight container in the fridge.
