Mr Ask loves eating and cooking breakfast, so I am the lucky recipient of breakfast in bed quite often (I know you’re jealous, but I get to do the dishes!). My fave of all breakfasts are these perfect waffles with a crisp shell and fluffy inner. We have found so many things to eat with them too: bacon, eggs, whipped butter, jam, cheese, maple syrup, lemon curd, cream, fruit, yoghurt, maple ice cream and strawberry or raspberry or mixed berry sauces……
Ingredients
- 2 cups self raising flour, sifted
- 2 eggs, separated
- 2/3 cup milk
- 1/2 cup water
- 90g butter, melted
- 2 tablespoon caster sugar
Instructions
- Pre heat waffle maker.
- Place flour, egg yolk, milk, water and butter in a large bowl. Using an electric mixer, mix until smooth.
- Using clean, dry beaters, beat egg whites in a small bowl until soft peaks form. Gradually add sugar and beat until it has dissolved.
- Gently fold egg white into batter until well combined.
- Spoon a little mixture into each waffle mould (this will vary depending on size of waffle iron), ensuring mixture fills all grooves; close lid.
- Cook for 3-4 minutes, or until golden. Use a plastic spatula to transfer waffles to serving plates. Serve warm.
