Recipe: New Years Greens & Black Eyed Beans {Heal A Hangover & Inspire Wealth & Happiness}

Just before Christmas I ordered some black beans in my online shop and they were substituted for black eyed beans (or peas, as some say). I hit the internet for inspiration and found that collard greens and black eyed beans is a traditional New Year’s Day dish in Americas south. It’s seems to come from an old Jewish tradition where black eyed beans were eaten in celebration of Rosh Hashanah, the Jewish New Year. Probably inspiring the old expression, “Eat poor on New Year’s, and eat fat the rest of the year.” Black eyed beans have long been considered a symbol of luck and wealth. Southerners added collard greens, which came to symbolize money and wealth. Since you rarely see collard greens, choose one of their cousins like kale, chard, mustard greens or silverbeet. 
 
Whether you believe this meal will bring you luck or not, it’s a delicious and practical New Years choice. Some green to replenish lost vitamins and some good for you carbs in those beans. Lots of good nutrition to undo last nights damage! This dish can be served with rice, making it a vegan version of the dish Hoppin’ John. Rice or not, cornbread is a traditional side. But I love this hot on some good bread that has been nicely toasted.
Ingredients
  • 2 tblsp olive oil
  • 2 cloves garlic
  • 1 large onion, chopped
  • 170g chopped kale
  • 1/2 cup vegan stock
  • 1 (400g) can black eyed beans, rinsed & drained
  • 1 lemon, juiced
  • 1/2 tsp red pepper flakes (more or less to taste)
Instructions
  1. Add the oil and onion to a large, high sided pan and cook on medium heat until the onions become translucent, about 7 minutes. Add the garlic and cook for another minute.
  2. Add the kale, stock and half the lemon juice. Cook until kale has wilted and become soft. You can add a little extra stock if needed.
  3. Add the black eyed beans, chilli flakes and remaining lemon juice. Cook until the beans are hot through.
