Recipe: No Bake Caramel Cheesecake Tart

Summary: I have been craving caramel lately and I kinda fancied a cheesecake, as it is my Birthday I was going to have one! Most cheesecake recipes I find have gelatin (well the no bake ones) and I really am not a fan. After some thinking I came up with this….

Ingredients

  • 1 pkt Oreo biscuits
  • 80g butter, melted
  • 1 (395g) can sweetened condensed milk
  • 250g cream cheese, softened
  • 4 tblsp golden syrup
  • 2 tblsp drinking chocolate or cocoa, for dusting

Instructions

  1. Add the condensed milk and golden syrup to a small saucepan and cook for about 10 – 15 mins, stirring constantly. You want it to become the colour and flavour of caramel. Set aside to cool for 20 mins or so.
  2. Crush the Oreos to crumbs with a food processor (or put them in a plastic bag and bash with a rolling pin) and add the melted butter, mixing till well combined. Press into the base of a large loose based tart tin or springform pan. Leave in the fridge to chill.
  3. Add the cream cheese to the bowl of a mixer (or use electric beaters) and beat until smooth. Add the cooked caramel and beat till thick and smooth. Pour into prepared case and smooth the top.
  4. Allow to chill for at least 3hrs in the fridge. Dust the top with drinking chocolate coca before serving.
