Summary: I have been craving caramel lately and I kinda fancied a cheesecake, as it is my Birthday I was going to have one! Most cheesecake recipes I find have gelatin (well the no bake ones) and I really am not a fan. After some thinking I came up with this….
Ingredients
- 1 pkt Oreo biscuits
- 80g butter, melted
- 1 (395g) can sweetened condensed milk
- 250g cream cheese, softened
- 4 tblsp golden syrup
- 2 tblsp drinking chocolate or cocoa, for dusting
Instructions
- Add the condensed milk and golden syrup to a small saucepan and cook for about 10 – 15 mins, stirring constantly. You want it to become the colour and flavour of caramel. Set aside to cool for 20 mins or so.
- Crush the Oreos to crumbs with a food processor (or put them in a plastic bag and bash with a rolling pin) and add the melted butter, mixing till well combined. Press into the base of a large loose based tart tin or springform pan. Leave in the fridge to chill.
- Add the cream cheese to the bowl of a mixer (or use electric beaters) and beat until smooth. Add the cooked caramel and beat till thick and smooth. Pour into prepared case and smooth the top.
- Allow to chill for at least 3hrs in the fridge. Dust the top with drinking chocolate coca before serving.
