Ingredients
- 200gm packet of orange slice biscuits (the cream filled kind in family assorted)
- 60gm melted butter
- 200mls cream
- 100gm mini marshmallows
- 2 1/2 tblsp sugar
- 3tblsp of orange liquer
- 1/2 Orange, juice and zest
- 250gm cream cheese, very soft
Instructions
- Crush the biscuits to crumbs and add melted butter. I used a food processor but you don’t need to.
- Press into the bottom and sides of a small tart shell with a removable bottom (I only did bottom of larger springform tin as that’s what I had) and chill.
- Meanwhile, bring cream to the boil in a saucepan and turn off heat, then immediately add mini marshmallows and sugar and whisk till smooth. Add 3tblsp of orange liquer, zest and juice of 1/2 an orange and mix well.
- Whisk in a very soft block of cream cheese. You can do that bit in a food processor if it’s already out. Pour into base and chill for at least 2hrs.
Quick Notes
I suggest serving with unsweetened whipped cream with good quality drinking chocolate added.
