Summary: I am Parmesan obsessed (Mr Ask says I love it more than him lol) and just love a little sweet with my salty. Plus I went a bit mental in the markets and I have tons of pungent Parmesan.
Ingredients
- 2 cups SR flour
- 180g parmesan, grated (see note)
- 1/2 tsp freshly cracked pepper
- 2 pears
- 125 g melted butter
- 1 cup milk
- 1 egg, lightly beaten
Instructions
- Pre heat oven 180C and grease a muffin tin (I use a silicon muffin form).
- Core the pears and dice finely.
- Combine the flour, pepper and Parmesan in a large bowl. Add pear and toss to coat.
- Stir in butter, milk and egg until just combined. Do not over mix.
- Bake in oven for 15-20 minutes or until cooked and golden.
- Makes Approx 16 muffins
Quick notes
I had a very strong and stinky Parmesan and I think that’s what you need. If you don’t have a strong cheese I suggest using 200g cheese instead of 180g.
