Summary: A truly classic cocktail! This recipe is designed for sharing and serves 8. I love that you can mix it up and chill it and then shake and serve. Especially handy when you are entertaining and having a drink too – in my experience the first round of cocktails are scrupulously measured and after that everything is just randomly emptied into the blender!
Ingredients
- 1 L pineapple juice
- 250ml coconut cream
- 250ml Baccardi or other white rum
- Plus ice for serving/blending
Instructions
- Mix the juice, coconut cream and rum together and chill.
- Shake well and pour into a glass of crushed ice.
- OR
- For icy pina colada add equal parts pina colada mix (shake it first) and ice to a blender.
- Serve in a cocktail glass and ENJOY!!!
