Summary: A twist on the classic creamed spinach. Mr Ask likes to layer the spinach and polenta as per the pic, I like to mix them together.
Ingredients
- 3 3/4 cups vegetable or chicken stock
- 3/4 cup polenta
- 3/4 cup grated parmesan (more or less as you prefer)
- 2 tblsp butter
- 1 bunch spinach
- 1 onion, chopped
- 3-4 cloves garlic, minced
Instructions
- Prepare the spinach by washing, removing any stalks or ribs and roughly chopping. Add 1 tablespoon of butter, onion, garlic and spinach and cook until just wilted.
- Add the stock to a saucepan and bring to a boil. Add the polenta and whisk well. Allow to cook for around 15 mins, whisking often until it is thick and creamy. Whisk in the remaining butter and the cheese and season with pepper. Stir through the spinach (or layer) and serve.
