Summary: This is my new go to recipe for those crazy busy nights! This is delicious, it’s real food and really quick! I buy pre chopped salads like coleslaw or beet slaw or a kale salad but just baby spinach would be great. I tend to buy pre made salsa instead of home making but it’s up to you. We tried this with white rice and we both thought the nuttiness of brown rice was much better. I love sour cream on my bowl & Mr Ask is into chicken. See, it’s all customizable to your own tastes!
Ingredients
- 1 (250g) packet of 90 second brown rice
- 2 (400g) tins black beans, drained & rinsed
- 375g salsa of your choice
- 4 spring onions, chopped
- 300g cherry tomatoes, halved
- 200g salad leaves (I like a mix of kale, cabbage, broccoli & carrot, pre sliced)
- 1 avocado, sliced
- Sour cream, optional
- Grated cheese, optional
- Cold roast chicken pieces, optional
Instructions
- Heat the rice according to the package directions and divide between two large serving bowls. Combine the salsa and the beans, microwave to warm if desired and divide between the two bowls.
- Continue to add the spring onions, cherry tomatoes, salad leaves and avocado, dividing between the two bowls.
- Add cheese or sour cream or roast chicken, as desired.
