Summary: Party season is on us and that means party food! Sometimes it feels like every party has the same things. This delicious dip break the boredom! It’s simple to make which is always a bonus. And it’s made with real veggies and no packets in sight. It’s also pretty amazing on a bagel or in a sandwich too.
Ingredients
- 1 tblsp spoon olive oil
- 1 zucchini, cut into thick rounds
- 1 capsicum, chopped into chunks
- 2 medium red onions, peeled & quartered
- 5 large garlic cloves, peeled
- 250g cream cheese, softened
- 75g fresh parmesan cheese, grated or shaved
- Salt & pepper
Instructions
- Pre heat the oven to 180C and line a baking tray with baking paper or foil.
- Place the veggies on the tray, drizzle with olive, season with salt and pepper. Toss to combine. Bake for 45 mins or until beginning to brown.
- Add the cream cheese to a food processor and process till smooth. Add everything and process until mostly smooth, with some texture. Season to taste with salt and pepper.
- Will keep for a week in the fridge.
