Recipe: Roast Vegetable & Goat Cheese Pizza

Summary: You know when you look in the fridge and you have lots of left over bits but not enough for a whole meal? When I saw I had to use up some veggies, a jar of tomato paste and half a packet of goat cheese the answer was clear – pizza! I have this quick no yeast base recipe, as well as this one which will rise in the time the veg takes to roast.

Ingredients

  • 3 tblsp olive oil
  • 1 onion, chopped into small wedges
  • 1 capsicum, chopped
  • 1 small head broccoli, cut into florets
  • 2 cloves garlic, skin on
  • 50gm soft goat cheese
  • 20gm Parmesan, grated
  • Salt
  • Pepper
  • 1 pizza base
  • 1/3 cup pizza or pasta sauce

Instructions

  1. Pre heat oven to 180C.
  2. Add the veggies to baking dish, toss in the oil and season with salt and pepper. Roast for 30-50mins or until tender and only just colouring at the edges.
  3. Add the tomato sauce to a bowl with the roasted garlic squeezed from it’s skin and stir.
  4. Spread the bases with sauce, scatter the pizza with the veggies. Top with the cheeses and bake till bubbly on top.
