Summary: You know when you look in the fridge and you have lots of left over bits but not enough for a whole meal? When I saw I had to use up some veggies, a jar of tomato paste and half a packet of goat cheese the answer was clear – pizza! I have this quick no yeast base recipe, as well as this one which will rise in the time the veg takes to roast.
Ingredients
- 3 tblsp olive oil
- 1 onion, chopped into small wedges
- 1 capsicum, chopped
- 1 small head broccoli, cut into florets
- 2 cloves garlic, skin on
- 50gm soft goat cheese
- 20gm Parmesan, grated
- Salt
- Pepper
- 1 pizza base
- 1/3 cup pizza or pasta sauce
Instructions
- Pre heat oven to 180C.
- Add the veggies to baking dish, toss in the oil and season with salt and pepper. Roast for 30-50mins or until tender and only just colouring at the edges.
- Add the tomato sauce to a bowl with the roasted garlic squeezed from it’s skin and stir.
- Spread the bases with sauce, scatter the pizza with the veggies. Top with the cheeses and bake till bubbly on top.
