Summary: Okay, this really is ‘to die for’ broccoli (and a pretty good way to cook cauliflower too) and is Mummy Asks favorite. I swear that even broccoli haters could change their minds….
Ingredients
- 2 large heads of broccoli
- 1/4 cup garlic olive oil*
- 1 lemon, zested plus 1 tblsp juice
- Salt
- Pepper
Instructions
- Preheat oven to 180C
- Make sure your broccoli is nice and dry, especially if you have washed it. Cut the broccoli into florets but keep them fairly big. I love to keep quite a bit of stem on.
- Toss the florets in the garlic oil and season generously with salt and pepper. Sprinkle lemon zest over the florets.
- Bake for 20-30 mins or until tender and crisping. Drizzle with the lemon juice and serve.
Quick notes
*Garlic oil is a wonderful, wonderful thing but if you don’t have it, just add 2 cloves of sliced garlic and use regular olive oil.
