Recipe: Rosé Arrabbiata Sauce

Summary: I know it’s a slightly fancy name for what is a spicy tomato cream sauce. Arrabbiata is Italian for angry or enraged and this sauce is fiery! I have strayed from the original, I hope you forgive me.

Ingredients

  • 2 tblsp olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 410g tin crushed tomatoes
  • 1 red chilli, finely sliced
  • 1 tsp dried oregano
  • 100ml cream
  • Salt, to taste

Instructions

  1. Add the oil, garlic and onion to a large frypan and fry for a few minutes, until softened and turning translucent.
  2. Add the tomatoes, oregano and chilli and cook for 10-20 mins. The sauce should look thicker and slightly darker.
  3. Add the cream and stir well. Add your choice of pasta to your sauce and serve with Parmesan.
