Summary: This is a great was to use up cooked rice or veggies. I prefer to make my own salsa for most dishes but a jar is perfect for this. This is a tasty side dish or add chorizo for a full meal.
Ingredients
- 1 cup raw rice
- 1 large capsicum, chopped
- 1 cup corn kernels
- 1 onion, chopped
- 2 tblsp oil
- 1 (375g) jar salsa
- 175g cheese grated
- chilli to taste
Instructions
- Cook rice to packet directions.
- Add the oil and onion to a large fry pan and fry the onions till they are soft.
- Add the chilli, rice, veg, salsa and cook till veg is just tender. Add the cheese and cook till hot through and cheese is melty.
- Serve with sour cream and coriander on top.
