Recipe: Savory Impossible Pie/Quiche

Summary: Not only possible but such a good meal when you just want to use up what’s in the fridge. It’s very flexible, so make it to your tastes.

Ingredients

  • 3 eggs, lightly beaten
  • 1½ cups milk
  • 2tblsp melted butter
  • 1 onion, chopped
  • 1 cup meat (diced bacon or ham, shredded cooked chicken or tinned drained tuna/salmon)
  • 1 cup grated cheese
  • 2 cups grated or finely chopped raw veg or chopped cooked veg
  • 1 cup white or wholemeal SR flour
  • Fresh or dried herbs
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 180C.
  2. Mix all ingredients together.
  3. Pour into a well greased pie dish or springform tin (as long as I’d doesn’t leak!).
  4. Bake at 170C for 30-45 minutes or until set and browned.
  5. Allow to cool in tin for 10mins before serving.
  6. I used wholemeal flour, roasted capsicum and crumbled fetta with parsley and a touch of garlic and chilli.

Variations

Its really up to your imagination but here are some combos to get you started: Ham and asparagus Tuna and corn Bacon and mushroom Cooked beef mince and cherry tomato Spinach and fetta Curried vegetable Shredded lamb and veg
