
Summary: Not only possible but such a good meal when you just want to use up what’s in the fridge. It’s very flexible, so make it to your tastes.
Ingredients
- 3 eggs, lightly beaten
- 1½ cups milk
- 2tblsp melted butter
- 1 onion, chopped
- 1 cup meat (diced bacon or ham, shredded cooked chicken or tinned drained tuna/salmon)
- 1 cup grated cheese
- 2 cups grated or finely chopped raw veg or chopped cooked veg
- 1 cup white or wholemeal SR flour
- Fresh or dried herbs
- Salt & pepper to taste
Instructions
- Preheat oven to 180C.
- Mix all ingredients together.
- Pour into a well greased pie dish or springform tin (as long as I’d doesn’t leak!).
- Bake at 170C for 30-45 minutes or until set and browned.
- Allow to cool in tin for 10mins before serving.
- I used wholemeal flour, roasted capsicum and crumbled fetta with parsley and a touch of garlic and chilli.
