Summary: This is a lovely simple desert that is perfect for a quick weekday meal or a fancy dinner party. You can make these in advance and assemble just before serving. I made one large one but you can maker smaller, individual ones too.
Ingredients
- 1 sheet puff pastry
- 6 tblsp icing sugar, divided
- 300ml cream
- 250g (1x punnet) strawberries
- 1/2 tsp vanilla extract
Instructions
- Slice the strawberries into a bowl and sprinkle with 2 tblsp icing sugar. Allow to sit in the fridge to macerate for at least 30 mins.
- Preheat oven to 200C.
- Cut the pastry in half and place on a lined baking tray. Prick pastry all over with a fork and sprinkle with 1 tblsp of icing sugar.
- Bake for around 15 mins or until puffed and golden. Allow to cool.
- Whip cream with 2 tblsp of icing sugar and vanilla to med peaks.
- If you are preparing in advance, stop here and finish off just before serving.
- Lay one piece of pastry on a serving plate, top with cream and strawberries and last layer of pastry. Dust with last tablespoon of icing sugar.
