Recipe: Simple Strawberry Millefeuille

Summary: This is a lovely simple desert that is perfect for a quick weekday meal or a fancy dinner party. You can make these in advance and assemble just before serving. I made one large one but you can maker smaller, individual ones too.

Ingredients

  • 1 sheet puff pastry
  • 6 tblsp icing sugar, divided
  • 300ml cream
  • 250g (1x punnet) strawberries
  • 1/2 tsp vanilla extract

Instructions

  1. Slice the strawberries into a bowl and sprinkle with 2 tblsp icing sugar. Allow to sit in the fridge to macerate for at least 30 mins.
  2. Preheat oven to 200C.
  3. Cut the pastry in half and place on a lined baking tray. Prick pastry all over with a fork and sprinkle with 1 tblsp of icing sugar.
  4. Bake for around 15 mins or until puffed and golden. Allow to cool.
  5. Whip cream with 2 tblsp of icing sugar and vanilla to med peaks.
  6. If you are preparing in advance, stop here and finish off just before serving.
  7. Lay one piece of pastry on a serving plate, top with cream and strawberries and last layer of pastry. Dust with last tablespoon of icing sugar.
