Summary: I think every family has a version of these but I thought you might like to compare notes! This a great mince recipe when everyone is tired of spaghetti bolognaise and the budget is tight. Some of you may have forgotten about this little gem!
Ingredients
- 500g beef mince (or whatever you like)
- 1 onion, chopped
- 1 clove garlic, minced
- 1 tblsp tomato sauce
- 1 tblsp Worcestershire sauce
- 1 tblsp soy sauce
- 1 tblsp BBQ sauce
- 1 egg
- 1 tblsp mixed dried Italian herbs
- ½ cup (approx) dried bread crumbs
- 1 cup raw white rice
- 2 (425g) cans condensed tomato soup
- 1 can water (as in fill empty soup can with water)
Instructions
- Mix the mince, onion, garlic, sauces and egg together with enough bread crumbs to make the mix bind. Mix the rice though and roll into balls. About 1 1/2 tblsp per ball, golf ball sized.
- Bring the tomato soup and water to a simmer and add the porcupine balls. Cover with a lid and leave on a gentle boil for 1hr – 75mins until cooked through. You can test them for ‘doneness’ by breaking open a porcupine.
- Serve porcupine with sauce and veggies, mashed potato is what’s in the picture.
