Summary: A simple lasagne for everyday
Ingredients
- 1 pkt fresh lasagne sheets
- 2 tsp salt
- 1 tsp pepper
- 500g ricotta (low fat OK)
- 250g frozen chopped spinach
- 500g zucchini, chopped into half rounds
- bunch of basil, chopped roughly
- 1 very large or 2 small onions, minced (I blitz in food processor)
- 1 ltr pre made passata (pureed tomato, can use canned crushed tomato instead)
- Grated cheese (tasty, cheddar or mozzarella)
Instructions
- Microwave the spinach till defrosted and place in a sieve. Press as much water out as you can.
- Mix the spinach, ricotta, salt, pepper, onion and basil until well combined.
- Start with a little passata then a layer of lasagne sheets, then a layer of ricotta mix, then lasagne sheet, passata, zucchini and cheese.
- Repeat layers until everything is used, finishing with a layer of lasagna sheet, passata and top with cheese to cover.
- Bake at 180C for 40mins or until hot through and golden and bubbly on top.
Quick Notes
These freezes very well for an easy dinner later.
Variations
Fried mince meat can be added to the zucchini layer.
