Summary: I’m lucky to be one of those people who had lunch money over a packed lunch when I was at school. These days I love a sandwich but it has to be goooood! It can’t all be luncheon meats or spreads like peanut butter, Vegemite or jams and jelly. For me it always starts with a nice wholemeal or rye bread – we rarely do a white loaf here. It also has to be nicely seasoned with salt and pepper, in my mind, this is what makes a good sandwich great.

- Cheese, cucumber & black pepper
- Sandwich spread & spinach
- Bread done like this, pizza sauce, cheese & salami
- Toasted bread, cheese and sliced pickled onion (chilli onions are the best)
- Cream cheese, walnuts, grated carrot & alfalfa sprouts
- Cottage cheese, spring onion or chives, salt & pepper
- Chicken salad to this recipe
- Swiss cheese, semi dried tomatoes, spinach and mayo (pictured)
- Vegemite & iceberg lettuce
- Balsamic glaze, pear or apple slices, Parmesan & rocket
- Bread like this, refried beans, salsa, sour cream, spring onion & cheese
