Summary: Yes, you read it right, Sumac. Sumac is a sour, lemony spice used in Middle Eastern cookery and I had a crazy thought about making a cake with it. Mr Ask was pretty certain I was headed for disaster but there was only one way to find out.
Ingredients
- 125g butter, softened
- 125g castor sugar
- 125g plain flour
- 1/2 tsp bicarb soda
- 1 tsp baking powder
- 2 eggs
- 1 tsp vanilla extract
- 2 ttsp ground sumac
- 2 tblsp milk
- 100g white chocolate chips
- For Icing
- 125g butter, softened
- 250g cups icing sugar
- 2 tblsp milk
- gel food colour if desired
Instructions
- Pre heat oven to 190C (180 fan forced). Line a 12 cup muffin tin with patty pans.
- Cream the butter and sugar in the mixer or with electric beaters, until pale and fluffy.
- Add the vanilla, milk and eggs, one at a time and mix by hand until well combined.
- Combine all remaining dry ingredients and add to the batter. Add white chocolate chip and stir until well combined.
- Divide mixture between the 12 patty pans and bake for 15-20 mins or until a skewer comes out clean.
- Allow to cool on a rack, completely, before decorating.
- To make icing:
- Beat the butter until smooth and icing sugar a bit at a time, add milk, food colour (if using) and beat for 10mins. Yes, 10 minutes!
- The icing should be nice and fluffy ready to pipe or spread on your cupcakes. Sprinkle with a touch of sumac if desired.
