Summary: This salad is inspired by a local Mexican restaurant Montezumas, I didn’t try to make it exactly the same, I just used my favourite elements. I am sure they used Kraft French Dressing on this salad as it quite a sweet dressing, so I endeavored to make something similar. I think it ended up kinda like Subways Sweet Onion dressing but you be the judge. Now I know it has a lot of sugar but it has no fat, so I guess there is a trade off there!
Ingredients
- 1 small broccoli, trimmed & chopped finely Inc stalk
- 1/3 head of cauliflower, chopped into tiny florets
- 1 green apple, skin on, chopped finely
- 1 cup frozen corn kernels, defrosted
- 1 small capsicum, finely chopped
- 2 large celery stalks, finely chopped
- 1 bunch chives, snipped
- 1/4 cup parmesan cheese, grated
- Dressing
- 1/3 cup golden syrup
- 1/2 cup white vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp red chilli flakes
- 1/4 tsp minced garlic, fresh or jar
Instructions
- Start with the dressing first so that you can chop the veg while it cools. For the dressing:
- Combine all ingredients in a small microwave-safe measuring jug and microwave on HIGH for a minute or until the dressing boils rapidly.
- Whisk everything to combine and cool in the fridge.
- To make the salad:
- Toss together everything but the cheese. Top with the cheese and pour on the dressing.
