Summary: This tastes just like sweet and sour from our local takeaway place but better! It’s loaded up with veggies and the fresh pineapple takes this from great to out of this world! Plus it’s really easy to make and you can use whatever veggies you have in the fridge. But trust me, you want to use fresh pineapple. If cutting up a pineapple seems hard, grab one of those pineapple corers, they cost less that $10 on eBay and pull out a perfect spiral of pineapple. Speaking of easy, sometimes I make up the sauce up as part of my meal prep, along with some rice and then dinner can be made in less than 20 mins. Now don’t freak out over the sugar in the sauce! Its just the way sweet and sour sauces are and at least this gets it’s colour from tomatoes and not dye. I have actually played with the sugar and this is the least amount possible. If it bothers you, up the veggies and go with brown rice.
Ingredients
- 4 cups cooked rice
- 1 tblsp peanut oil
- 3 onions, roughly chopped
- 2 cloves garlic, crushed
- 2 carrots, cut into rounds
- 100g snow peas, topped, tailed & chopped
- 1 capsicum, chopped
- 1 cup frozen peas
- 1 fresh pineapple, skinned & chopped
Sweet and Sour Sauce:
- 2/3 cup white sugar
- 1/3 cup rice wine vinegar
- 1/3 water
- 1/2 tsp salt
- 2 tblsp tomato sauce/ketchup
- 2 tsp corn flour (GF if needed)
Instructions
- To make the sauce; add the sugar, vinegar water and salt to a small saucepan over medium high heat. Meanwhile, whisk the corn flour into the sauce/ketchup until no lumps remain.
- Return to the sugar mixture and stir until all the sugar dissolved before adding the ketchup mixture and whiling smooth. Allow the mix to come to a boil and then remove from the heat and cook until needed. You can store this in an airtight container the fridge for up to a week.
- Add the oil to large pan over medium high heat. Add the onions and carrots and sautee until the onion softens and begins to be cometranslucent. Add the garlic and cook until fragrant before adding the remaining veggies, pineapple and the rice. Stir fry until the veggies are to your liking before adding the sauce and tossing through.
