Summary: Perfect for a summer BBQ or a weeknight meal. We often team with with hummus, fried haloumi and pita bread but you could serve it with almost any meat.
Ingredients
- 1 cup couscous
- Chicken or vegetable stock
- 1 tblsp butter
- 1 bunch parsley, chopped
- 1 cucumber, chopped into small pieces
- 1/2 bunch spring onions, chopped
- 1/4 cup garlic olive oil
- 1/3 cup fresh lemon juice
- Salt
- Pepper
Instructions
- Cook the couscous with the butter and the stock, according to packet directions. Fluff with a fork and allow to cool.
- Combine parsley, spring onion, cucumber and couscous. Drizzle oil and lemon over the salad and toss. Season with salt and pepper to taste.
- Serve room temperature or cold.
