Recipe: Tabouleh Style Couscous Salad

Summary: Perfect for a summer BBQ or a weeknight meal. We often team with with hummus, fried haloumi and pita bread but you could serve it with almost any meat.

Ingredients

  • 1 cup couscous
  • Chicken or vegetable stock
  • 1 tblsp butter
  • 1 bunch parsley, chopped
  • 1 cucumber, chopped into small pieces
  • 1/2 bunch spring onions, chopped
  • 1/4 cup garlic olive oil
  • 1/3 cup fresh lemon juice
  • Salt
  • Pepper

Instructions

  1. Cook the couscous with the butter and the stock, according to packet directions. Fluff with a fork and allow to cool.
  2. Combine parsley, spring onion, cucumber and couscous. Drizzle oil and lemon over the salad and toss. Season with salt and pepper to taste.
  3. Serve room temperature or cold.
