
Summary: This is one of those perfect recipes, it’s super easy to make & I swear it’s the best choc chip cookie around. It will seem oily, like you’ve maybe done something wrong but that’s how they should be.
Ingredients
- 250g plain flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 100g caster sugar
- 110g light brown sugar
- 175g vegan 70% dark chocolate chips or chopped chunks
- 135ml canola oil
- 75ml water
- Flaky sea salt like Maldon, for garnish
Instructions
- Preheat oven to 180C and line a baking tray or trays with baking paper.
- Add all the dry ingredients to a mixing bowl & whisk to combine. I just put the bowl on the scale & tare it before each addition
- Add the chocolate, oil & water and stir to combine.
- Place scoops of cookie dough on the prepared tray, leaving plenty of space for expansion. Sprinkle with flaky salt.
- Bake for 12-14 mins. Allow to cook on the tray for a few minutes before moving to a rack.
Makes approximately 18 cookies
