Summary: A a taste of summer any time of year
Ingredients
- 900g watermelon, chilled and seeded
- 250ml of Australian sparkling white or champagne
- 2 tbsp lime juice
- 1 tsp lime zest
- 2 tbsp of mint to garnish
- sugar syrup to taste (see recipe notes)
Instructions
- Place watermelon, sparkling wine, lime juice and rind and process in the blender until smooth.
- Add cooled sugar syrup to taste.
- Pour into long glasses or martini glasses and serve immediately, garnished with mint springs. Enjoy!
Quick Notes
To make sugar syrup (often called simple syrup) – 2 parts sugar and 1 part water. Bring water to the boil in a saucepan and add sugar. Remove from heat once sugar is melted, cool and store in a jar in the fridge
