Recipe: Welsh Grans Potato & Leek Soup

Summary: Very simple but full off leek flavour.

Ingredients

  • 2 large leeks, whites & light green parts chopped
  • 4 medium potatoes, peeled and chopped
  • Chicken stock
  • 1/2 tsp celery salt
  • Black pepper
  • 2 tblsp butter

Instructions

  1. In a small soup pot fry the leeks in the butter, very slowly but allowing some to colour.
  2. Add the potatoes and celery salt with just enough stock to cover.
  3. Simmer gently for 40mins to an hour until potato is falling apart.
  4. Blend soup and season to taste.
