Summary: Very simple but full off leek flavour.
Ingredients
- 2 large leeks, whites & light green parts chopped
- 4 medium potatoes, peeled and chopped
- Chicken stock
- 1/2 tsp celery salt
- Black pepper
- 2 tblsp butter
Instructions
- In a small soup pot fry the leeks in the butter, very slowly but allowing some to colour.
- Add the potatoes and celery salt with just enough stock to cover.
- Simmer gently for 40mins to an hour until potato is falling apart.
- Blend soup and season to taste.
