Summary: I may have fallen in love – fudgey, moist cakiness studded with melty caramel and sweet, white chocolate. Blondies are similar to Brownies but are flavoured with brown sugar. They sometimes have white or milk choc chips, molasses, nuts or coconut. These have caramels and white choc chips but you could omit them if you wish. You will find jersey caramels in the lollies isle or pick n mix section of the supermarket.
Ingredients
- 250g salted butter, melted
- 1 1/2 cups brown sugar, packed
- 2 eggs, lightly beaten
- 2 tsp vanilla
- 2 cups plain flour
- 1/2 cup white chocolate chips
- 180g jersey caramels, chopped into quarters
Instructions
- Pre heat oven to 180C and line a small slice tin with baking paper.
- In a large bowl, mix together butter and brown sugar. Add the vanilla and the eggs and stir until well combined.
- Add in the flour, stirring until smooth. Stir in the caramels and choc chips.
- Pour into prepared pan and spread evenly. Bake for 30mins or until a skewer inserted into the middle comes out clean. Allow to cool in pan before cutting into squares.
