Summary: Oh is it stormy today! Luckily I have a super quick minestrone for you. In fact it’s so easy it’s one of my cheats soups (Potato, Leek & Bacon and Veggie & Pasta are the other two) which only take 30 mins to prepare and cook. This one features a package of stir fry veggies, I like the ones with red & white cabbage, celery, carrot, cauliflower, broccoli and capsicum. This hearty minestrone is perfect for a cold day! You can run in from work, turn the heater on, get this going and it will be ready to eat by the time you get your comfy clothes on! This easily doubles if you have a hungry horde to feed….
Ingredients
- 2 tblsp garlic olive oil
- 1 onion, chopped
- 1 (400g) tin crushed tomatoes
- 5 – 7 cups stock
- 1 (400g) bag of stir fry veg
- 1/2 cup small macaroni
- 1 (400g) tin mixed beans
- Cheese to serve, optional
Instructions
- Add the garlic oil and onion to a soup pot and fry until translucent.
- Add everything else and bring to a slow boil.
- Allow to cook for 20-30 mins or until pasta is tender, adding stock as needed
- Serve with crusty bread and cheese.

Now, I know that instant mash potato has a pretty bad rap but it does make this recipe oh so quick and simple. When I’m keen to get dinner on the table, potato and leek soup just doesn’t get a look in. All that peeling and chopping before you even start cooking! I truly having been meaning to share it for over a year but it gets made when time is too tight or can’t be bothered nights and I never remember to take photos!
