Summary: I could eat Mexican every day – beans, cheese and spice are some of my favourite things. Of course, I posted my Mexican Layer Dip yesterday but back to the beans. This way of cooking black beans adds texture, flavour and heats in one go. It makes a great vegetarian option on it’s own or you can add it meat tacos too. Black beans can be hard to find in Australia, I get mine from Gaganis Brothers or the occasional gourmet/specialty supermarkets.

Ingredients
- 1 can black beans, drained and rinsed
- 2 tblsp taco sauce
Instructions
- Preheat oven to 180C
- Stir the beans and sauce together, until well coated.
- Lay the beans out in a single layer on a lined baking tray.
- Bake for 15mins or until some beans are forming a crust.
- Use in tacos or burritos.
