Summary: A perfect blend of sweet and salty that makes me feel like it’s summer.
Ingredients
- 1 kg seedless watermelon
- 180g haloumi, in 1 cm slices
- 1 red onion, sliced
- 1/4 cup white vinegar
Instructions
- Start by adding the onions and vinegar together in a little bowl, let that stand while you make the rest of the salad.
- Cut the rind off the watermelon and cut into 2 cm cubes.
- Cook the haloumi on a hot grill (or fry pan) for 1-2 minutes per side, until dark and blistered. Cut cooked haloumi into bite size pieces
- Drain the onion. Add the onion, watermelon and haloumi to a salad bowl and toss. Serve as a starter or side dish
Variations
Feel free to swap the haloumi for fetta but I can’t say no to fried cheese!
