Recipe: Homemade Cream of Tomato Soup

Summary: Winter is all about soup in the Ask House and this one is a comforting and quick version of a classic. You can have this warm delight on the table in 30min or less! I use passata, the tomato purée in the tall jars but you could use tinned tomatoes and give them a quick blend or use tomato juice instead. Of course if you can get your hands on homemade purée, use that!

Ingredients

  • 1 onion, finely chopped
  • 3 tblsp garlic olive oil
  • 2 (750ml) jars tomato passata
  • 1 tsp dried oregano
  • 1 (250g) block cream cheese, cubed
  • 1-2 tsp vegetable stock powder
  • Salt
  • Pepper
  • Basil, to serve

Instructions

  1. Add the oil and onions to a pot and fry for a few minutes till onion is soft.
  2. Add passata and basil and bring to the boil. Add stock, salt and pepper to taste. I’m pretty generous with the seasoning, especially salt.
  3. Microwave the cubed cream cheese for about a minute, or until melty. Add to the soup and stir until melted through. If you find you have lumpy bits or you are in a hurry, give it a whiz with a stick blender till smooth.
  4. Serve with shredded basil and crusty bread.
