Summary: Winter is all about soup in the Ask House and this one is a comforting and quick version of a classic. You can have this warm delight on the table in 30min or less! I use passata, the tomato purée in the tall jars but you could use tinned tomatoes and give them a quick blend or use tomato juice instead. Of course if you can get your hands on homemade purée, use that!
Ingredients
- 1 onion, finely chopped
- 3 tblsp garlic olive oil
- 2 (750ml) jars tomato passata
- 1 tsp dried oregano
- 1 (250g) block cream cheese, cubed
- 1-2 tsp vegetable stock powder
- Salt
- Pepper
- Basil, to serve
Instructions
- Add the oil and onions to a pot and fry for a few minutes till onion is soft.
- Add passata and basil and bring to the boil. Add stock, salt and pepper to taste. I’m pretty generous with the seasoning, especially salt.
- Microwave the cubed cream cheese for about a minute, or until melty. Add to the soup and stir until melted through. If you find you have lumpy bits or you are in a hurry, give it a whiz with a stick blender till smooth.
- Serve with shredded basil and crusty bread.
