Summary: In winter I love to curl up with a cup of tea and a sweet treat but with these cookies the tea is already in the cookie!
Ingredients
- COOKIES
- 1/3 cup castor sugar
- 65g butter, softened
- 1 egg
- 1/2 tsp vanilla extract
- 1 tsp lemon juice
- 1 Lady Grey tea bag (or Earl Grey if you prefer)
- 3/4 cup plain flour
- pinch of salt
- LEMON ICING DRIZZLE
- 1/3 cup icing sugar
- 1 tblsp lemon juice
Instructions
- COOKIES
- Pre heat oven to 180C
- Cut open the tea bag and add the contents, along with everything else into the bowl of a food processor or into a mixing bowl.
- Process or mix with wooden spoon until a ball forms.
- Roll or form into a log shape and wrap in cling wrap. If you twist each end of the cling wrap in different directions you get a nice shape. Leave to firm in fridge for 30mins (or up to 3 days).
- Slice into thin rounds. Place on a lined tray and bake for about 10 minutes until the edges are just golden-brown. Do NOT over cook!
- LEMON ICING DRIZZLE
- Mix together until a runny paste (add a touch more lemon juice if you need) and use a teaspoon to drizzle over cookies.
- Allow to dry before storing.
