Ingredients
- 1 cup cape gooseberries papery skin removed
- 1/2 cup water
- 3 heaped tsp sugar
- 1 heaped tsp honey
- 1 level tsp each pimento (allspice), ginger, nutmeg
Instructions
- In a big frypan bring water to a simmer and add sugar and honey and stir till dissolved.
- Add spices and mix well.
- Add gooseberries and cook till starting to ‘sog’ and mash a bit with a masher.
- Cook till sauce-y and it will thicken a little when cool.
- Store for a while in a sealed container in the fridge of forever in proper preserving jars. Lots of love to Mike for this recipe as he made it from scratch and guards it closely xx
