Recipe: Mother in law Asks Leche Flan

Summary: Leche flan is the Filipino version of creme caramel. It is a total family favourite and simple to make.

Ingredients

  • 3 eggs
  • 1 (395g) tin sweetened condensed milk
  • 300ml cream
  • 3 tsp vanilla essence
  • 1 lemon, zested
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 100C or whatever is the lowest setting on your oven.
  2. Add the sugar to a baking dish and place under the griller, keep an eye on it, sugar burns quickly. You are making the caramel sauce part. Allow the sugar to brown to your desired ‘caramel’ colour, it won’t colour anymore than this. Once sugar is brown enure it covers the base of the dish evenly, set aside.
  3. Mix all the other ingredients together, until well mixed and strain out zest.
  4. Pour the mix gently onto the caramel and level out with a spatula. Place the baking dish of leche flan in a larger baking dish. Add hot water to the larger dish so it comes halfway up the side of dish containing the leche flan. Bake for around 1 hour until set and allow to cool before putting in the fridge.
  5. To serve, run run a thin knife around the edges of the mould to loosen the leche flan. Place a platter on top of the baking dish and quickly turn upside down to position the golden brown caramel on top
