This is so simple but still one of my fave side dishes. The nutty butter and the lemon are just made for spinach. Be sure to use a generous hand when seasoning – it really makes the difference between good and great!
Ingredients
- 50g butter, cubed
- 1 bunch spinach, devained and chopped
- 1 large shallot, chopped (or small onion)
- 1-2 cloves garlic, minced
- 1-2 lemons, juiced
- Salt
- Pepper
Instructions
- Add theĀ butter to the pan with shallot, garlic and spinach.
- Cook for a minute or two then turn with tongs until all spinach is wilted.
- Add lemon juice, salt and pepper to taste and serve.
