Summary: Don’t fear, this recipe can be doubled or tripled to meet the demand for these peanut buttery chocolate treats! And they are super easy.
Ingredients
- 250g smooth peanut butter
- 125g butter, softened
- 260g icing sugar
- 100g dark chocolate
- 1 tsp vegetable oil
Instructions
- Add butter, peanut butter and icing sugar to the bowl of a mixer and mix till well combined.
- You can do this by hand but you really need to sift the icing sugar if you do.
- Roll into balls (I have a nifty cookie scoop I used, it’s like an ice cream scoop but much smaller) and place on a lined baking tray.
- Allow to chill for an hour.
- Break or chop up the chocolate and place in a microwave safe bowl. Melt the chocolate by zapping for 10 secs at a time till just melted and stir in oil.
- Use a spoon to drizzle, dollop and swirl over the peanut butter balls.
- Chill in the fridge until chocolate is set and enjoy!
- Makes approx 30, depending on size.
