Recipe: Peanut Butter Truffles

Summary: Don’t fear, this recipe can be doubled or tripled to meet the demand for these peanut buttery chocolate treats! And they are super easy.

Ingredients

  • 250g smooth peanut butter
  • 125g butter, softened
  • 260g icing sugar
  • 100g dark chocolate
  • 1 tsp vegetable oil

Instructions

  1. Add butter, peanut butter and icing sugar to the bowl of a mixer and mix till well combined.
  2. You can do this by hand but you really need to sift the icing sugar if you do.
  3. Roll into balls (I have a nifty cookie scoop I used, it’s like an ice cream scoop but much smaller) and place on a lined baking tray.
  4. Allow to chill for an hour.
  5. Break or chop up the chocolate and place in a microwave safe bowl. Melt the chocolate by zapping for 10 secs at a time till just melted and stir in oil.
  6. Use a spoon to drizzle, dollop and swirl over the peanut butter balls.
  7. Chill in the fridge until chocolate is set and enjoy!
  8. Makes approx 30, depending on size.
