Summary: I have been raspberry obsessed lately! And I’m very partial to popsicles, especially when it’s a zillion degrees outside. We are expecting a heatwave, so I did what anyone would do, I made popsicles! Fresh and fruity popsicles that are wonderfully tart and sweet. They are also 100% gorgeous! I love how the raspberry and passionfruit form a delightful sunset marble. These are so easy to make! A little mixing and blending and then pour and freeze. You really have to try these! They’re so good, everyone will want one. Even Mr Pyjamas couldn’t resist their charm…

Ingredients
Passionfruit Creamsicle Mix
- 1 (400g) can coconut cream
- 1 cup strained passionfruit pulp
- 2 tblsp maple syrup
Raspberry Lemonade Mix
- 2 cups raspberries (fresh or frozen)
- 1 (330ml) can fizzy lemonade (ie. Sprite)
Instructions
- Add the coconut cream, passionfruit pulp and maple syrup in a medium bowl and whisk until well combined.
- Add the raspberries and half the lemonade to a food processor or blender and processor until smooth. Strain the raspberry mixture into a large measuring jug. Add the remaining lemonade and stir.
- Pour the two mixtures into the popsicle mould in ‘layers’. The two flavours will naturally marble into each other. I started and finished with raspberry and poured the passionfruit in the middle.
- Fit the lid and insert popsicle sticks. Freeze for at least 6 hours but overnight is best. This mix makes approx 10 popsicles.
