Summary: I am terrible at eating a proper lunch! Working at home means I put things off and then all of a sudden, it’s dinner time. So if I am making a properly cooked lunch, it needs to be fast! Couscous is always fast and often comes in wholegrain variations, so it’s perfect. I am having a love affair with brussel sprouts and frozen peas are standby but choose whatever veg floats your boat. You can adjust your cook time for whatever veggies you choose and how cooked you like them. Nutritional yeast adds a B12 vitamin boost and adds a savory, cheesy sort of flavour. It all comes together in 10 minutes or less and makes a perfect at home lunch for one. You could totally rock this in the office too, just bring your veggies prepped. In fact, having some couscous and nutritional yeast in your drawer could be a very delicious idea. Lunch has never been more quick and tasty!
Ingredients
- 100g brussel sprouts (I love the baby ones this time of year)
- 1/4 cup frozen peas
- 1/4 cup instant couscous
- 1 tsp garlic olive oil
- 2-3 tsp nutritional yeast (or to taste)
- 1/4 cup hot water
- 1 spring onion, snipped
- Black pepper
Instructions
- Halve or quarter the sprouts, depending on size. And add to a microwave safe container and microwave for 90 secs or so. The peas should be mostly defrosted and the sprouts should be lightly softened.
- Add the remaining ingredients to the veggies. Cover and microwave for 90 to 120 seconds or until veggies are tender and couscous is fully cooked.
- Fluff and enjoy!
