Summary: A perfect cocktail for Valentines, a girls night or even a baby shower! This is loosely based on a Bellini but if you swapped the bubbles for lemonade it would make a lovely mocktail version. This one is made to share but I’m sharing this one with The Bestie. She’s a sucker for strawberry bubbles and could use a drink after losing a loved one today, I’m sending this cyber cocktail straight out to her.
Ingredients
- 1 (450g) punnet strawberries, hulled and diced
- 1 tblsp castor sugar
- 1 tsp lemon juice
- 1 bottle of champagne or Australian Sparkling White
Instructions
- Place strawberries in a bowl and sprinkle sugar over the top. Allow to macerate for 30 minutes or even over night.
- Blend the strawberries and lemon juice in a blender, until a smooth purée. Sieve the purée or just don’t bother!
- Pour the puree into a serving jug and gently stir in champagne.
- Pour into pretty glasses and ENJOY the weekend xxxx
