Summary: I love that apricot delight stuff you can buy in the supermarket but it’s so full of sugar! Even homemade apricot balls made with condensed milk are very sugary. This is definitely much healthier and less sweet, which totally suits me. If you taste the mix and feel like you want more sweetness, add in some maple, agave or rice syrup to taste. This slice is super easy to make too, the food processor does all the work and it’s no bake. You could easily make these into balls and roll in coconut but making it as a slice is way faster and easier. Everyone loves these! I’ve already made these three times to meet demand!
Ingredients
- 150g raw almonds
- 100g desiccated coconut plus extra for finishing
- 500g dried apricots
- 1/4 teaspoon salt
- 1/4 cup warm water, if needed
Instructions
- In a food processor, pulse the almonds until they are finely chopped.
- Add the remaining ingredients and process until the mix forms a uniform ball. If it’s not coming together drizzle in some hot water until it does.
- Line an 18cm x 28cm baking tin with baking paper and sprinkle with extra coconut. Scoop the apricot almond mixture into the dish and press it firmly into the dish, using another piece of baking paper. Sprinkle with additional coconut and press in with paper as before.
- Cover and refrigerate the slice for 2-3 hours, then lift the parchment paper out to cut into 24 squares using a sharp knife.
- Store in an airtight container in the fridge.
